Guadalajara has one of Mexico’s most vibrant taco cultures. But don’t just trust me on that:
A huge coffee table book on Guadalajara tacos recently joined our library, extoling the area’s traditions from cavernous fast-paced sit-down spots to the guy with tiny three-wheeler he outfitted to serve the steamy tacos de cabeza that have brought him fame for forty years.
When our Topolo team stepped off the plane in Guadalajara, we were ready. We’d read every page of that brilliant new book (among many others), and we’d trolled the internet.
I even dug up notes from my first Guadalajara research trips 40-some years ago. We hit 16 spots in two days, and this menu is what has emerged from that deep dive. The best of Guadalajara’s rich and unique taco culture is captured here, seen, of course, through Topolobampo eyes. Once you’ve finished this culinary expedition, we’re guessing that you’ll be booking a trip to Guadalajara right away.

Crispy yellow corn masa (smoked black cod & potato filling), shattered & sauced with roasted tomatoes & cascabel chiles, cured Ora King salmon, avocado, smoked trout roe, snap peas, rooftop bok choy.
Lion’s mane mushroom pate (homemade black bean miso, black beans) seared on to a just-made hoja santa tortilla, black truffles, wild chanterelles, bright avocado-tomatillo salsa
Wagyu tongue ‘n’ cheek, ember roasted onion, spicy arbol salsa, herby salsa verde, shiso. Painted tortillas.
Slow-braised Kilgus Farm goat (red chile adobo), charred little rooftop turnips, braising juices, homemade panela cheese, yahualica chile salsa with peanuts. Blue & pink masa tortillas.
Sorbet of fermented heirloom corn tejuino (with dark raw sugar), salted lime sorbet, tangy tapioca pearls, finger lime, green mango.
Crispy masa flauta, cajeta mousse filling, crema de rancho, crumbled peanut mazapan, banana pudding, chocolate-sesame “salsa macha” (peanut, ancho).
